Two often neglected cereals for Celiacs and other people:
Although oats have been widely publicized for
their heart-protective properties, millet is a grain that should also be
included on your list of heart-healthy choices because of its status as a good
source of magnesium, other minerals and a good percentage of protein. MILLET if
cleaned and pellet removed, doesn’t contain gluten and can be cooked to obtain
a rice similar product or overcooked to obtain a porridge like meal. The other gluten free cereal that I want to introduce
is TEFF that is high in protein and calcium, and gluten-free, teff is already
growing in popularity on the international stage.
Yet as Teff is a staple foodstuff in Ethiopia,
particularly when turned into a grey flatbread called injera, the country
currently has a long-standing ban on exporting the grain, either in its raw
form, or after it has been ground into flour, because they want to prevent what
happen with Quinoa in countries like Peru or Bolivia where they can’t afford to
buy it anymore.
Now entrepreneurial Ethiopian companies can only
export injera and other cooked teff products, such as cakes and biscuits that
can be found in US, germany, norway. This is a very nutritious cereal, high in
protein like quinoa and without gluten. Could be a good idea if you find it,
but Millet is for sure available !!
